You can’t beat the combination of banana, peanut and chocolate – these easy-to-make, healthy muffins are what you need in your life!
For The Banana Mixture
2-3 large ripe bananas
150ml almond milk
3 tbsp maple syrup or date nectar
1 tsp vanilla extract
150g oat flour
2 scoops Peanut Butter Protein Powder/Or any of your choice
40g stevia or sweetener
2 tbsp flaxseeds
1 tsp bicarbonate of soda
1 tsp baking powder
1 tsp cinnamon
For The Chocolate Mixture
2 tbsp cacao or cocoa powder
1 tbsp almond milk
1 tbsp maple syrup or date nectar
For The Chocolate Topping
2 tbsp maple syrup
2 tbsp coconut oil
3-4 tbsp cacao or cocoa powder
Preheat the oven to 180 degrees and lightly grease a 6-hole muffin tin.
Place the bananas in your Ninja blender along with the almond milk, maple syrup or date nectar and vanilla. Whizz up until smooth.
Stir in the oat flour, peanut protein powder, stevia, flaxseeds, baking powder, bicarbonate of soda and cinnamon to create a smooth batter.
Spoon half of this mixture between the muffin tins, filling each half-way. Now stir in the cacao/cocoa powder, almond milk and maple syrup or date nectar to the remaining mixture then spoon on top of each muffin to reach the top.
Bake for 15 minutes until risen and quite firm to the touch. Leave to cool.
Once the muffins have cooled, gently heat the maple syrup and coconut oil in a pan, then whisk in the cacao/cocoa powder to form a smooth chocolate sauce.
Spoon over each muffin – either enjoy straight away or keep the muffins in the fridge for 30 minutes – the chocolate will harden and form a nice crisp shell!
