70 gr protein powder
60 gr tahini
150 gr soft dates
60 gr cacao nibs
1 tbsp lucuma powder(optional)
pinch of salt
If your dates aren’t soft, soak them in warm water for 30 min prior to blending.
Add all the ingredients, except cacao nibs, to the Ninja food processor bowl and blend untill everything is evenly incorporated and the ball forms.(If the mixture seems too dry add 1 tablespoon of plant-based milk at a time)
Lastly, add cacao nibs and blitz a few times.
Remove dough from the food processor and press into the prepared tin lined with baking parchment.
Refrigerate for 2 hours, then remove from the tin by lifting the edges of baking parchment and cut into bars of your desired size.
Store in the fridge in the airtight container for up to a week, or in the freezer for up to a month.
