This savoury pancake recipe is gluten free and suitable for vegans – so suitable for all, and it’s incredible quick and easy too. The recipe may be simple and requires very little ingredients but the outcome is so delicious and tastes so special.
100g gram (chickpea) ﬂour
50g buckwheat ﬂour
1/2 tsp chilli ﬂakes
6g chives – chopped
Salt & Pepper
1 tbsp olive oil
Add the gram ﬂour, buckwheat ﬂour and water to your blender and blend until combined together. Add the chilli ﬂakes, salt and pepper and blend again. Then stir in the chopped chives.
Add some olive oil to a frying pan over a low-medium heat and allow to heat up.
Once the pan is hot, pour 1/4 of the mixture into the pan. Cook for 3-4 minutes or until the top starts to cook, then ﬂip and allow to cook for a further 2-3 minutes on the other side.
Repeat with the rest of the mixture until you’ve made all your pancakes.
Top with anything you like – avocado, rocket, spinach, tomatoes, extra chives etc.
