350g cooked sweet potato
450ml vegetable stock
1 medium white onion
1 clove garlic
Coconut oil for cooking
Heat a little coconut oil in a frying pan over medium heat. Slice the onions and garlic clove and add these into the saucepan. Cook until the onions have become soft and translucent.
Allow to cool to a room temperature.
Peel your cooked sweet potatoes and combine the potato, stock, cooked onion and garlic in your Ninja Blender. Blitz until smooth and creamy.
Pour into a pan and warm through.
Season to taste with black pepper and a pinch of your preferred spice blend.
Sprinkle on your croutons.
Serve into bowls and top with a swirl of natural yoghurt and some herbs
